What Is Soft-Shell Crab?

Soft-shell crabs are blue crabs that have recently molted their hard exoskeleton, leaving them entirely edible—shell and all. Harvested at the perfect moment, these crabs are prized for their tender texture and sweet, oceanic flavor. The process is time-sensitive, requiring careful monitoring and immediate refrigeration to ensure peak freshness. As the event’s tagline says, they’re served “fresh from the shedders to your plate.”
